This savoury spread, a kind of soft pork pâté is a speciality of Mallorca.
Preparation time: 15 minutes
Serves 6
250g (8 oz) chorizo sausage, skinned and chopped or sliced
100g (3 ½ oz) pure, white pork dripping or lard
1 tablespoon paprika
1 tablespoon chopped fresh marjoram or oregano
1 tablespoon sherry vinegar
1 teaspoon salt
½ teaspoon pepper
Mash all ingredients thoroughly with a fork or blend in a food processor.
Pot and store in the fridge for up to 3 months.
Bring back to room temperature before serving.
Delicious in toasted sandwiches.
